Food and drink

We believe that true quality can only be achieved with real ingredients. It is impossible to make good and healthy food out of mediocre, industrially produced ingredients. If the ingredients are amazing, we only need to emphasize their quality when preparing our food. It is about respecting ingredients, not transforming them. We base our choices on a few simple rules:

• Simplicity = power
• If possible, we opt for organic ingredients.
• If possible, we choose fair trade products.
• We will never use bio-industry products.
• We cook by the seasons.
• We prefer products from small-scale and local producers.
• Our kitchen is not strictly Italian, but we cook the Italian way: The ingredients are on number one, we just emphasise their quality.
• We cook in a healthy way, we use a lot of fish. olive oil and vegetables.
